How to Make Moin-Moin





INGREDIENTS
(to serve six (6) people)

3 Cups of beans

Red hot peppers (jabanero)

2 Large bell peppers

2 large Onions

1 Can of cornedbeef

6 boiled eggs

1tbs ground crayfish

3tbs Corn or vegetable oil

2 knorr cubes

Foil Paper/mini foil trays




Step 1: Wash the and peels the beans. Peel it until there is no more skin left on the beans.


Make sure the finished products is all white. (As shown above)

(Some people leave a little bit on skin on the beans for fiber, but I don't because it gives the moin moin a weird taste. )


Step 2: After skinning the beans, blend the beans into a smooth paste. (As shown above).


Step 3: add bell peppers, hot pepper and onions into blended beans and blend until peppers and onions are completely blended. (as shown above)

add ground crayfish, knorr cubes

heat up the oil and then pour the oil into the mixture and then stir everything until completely mixed.


Open up corned beef and peel eggs.

mix in the corned beef into beans and stir.

Using a ladle pour bean paste mixture in the already folded foil paper pouches or mini foil trays. Fill each tray or pouch a little more than half way. Then add two egg halves into each tray or pouch and seal it. Seal the pouch by folding it over and seal the mini trays with foil paper.
Fill one-tenth of the pot with water.

Place the pouches and/or mini foil trays into the pot. (Make sure water doesnt cover the foil pouches)


Cook for about 40-45mins ... make sure you keep checking to make sure there's still water in the pot. if the water dries up, add some more.

when the moin moin is solid on the inside, then it is ready to be served.

Tip: prod the moin moin with a fork, if it comes out moist/wet, then it isnt cooked.

Moin moin can be eaten alone, or with rice, ogi, garri.
